Weekly Meal Plan 11.05.23

Happy Sunday! Here is the weekly meal plan for the upcoming week, with links to the recipes. It’s a simple week for meal planning for our family, as we are expecting the birth of our second baby any day now. I doubled each recipe and froze the leftovers in freezer bags to make our evenings in the future easier. Enjoy!

Wednesday: Slow Cooker Chicken & Gravy over Roasted Potatoes and Broccoli

*Notes – this recipe makes the gravy from scratch, which I highly recommend! I’m sure you could do a package gravy if you were in a pinch, but honestly the homemade version was really simple. I also adjusted the seasonings as follows:

Chicken:

  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon pepper

Gravy:

  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried parsley
  • 1 teaspoon paprika 
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • I did not add any salt to the gravy as the chicken broth and bouillon already have plenty of sodium

With a half hour left on the slow cooker, I roasted my potatoes and veggies. I quartered fingerling potatoes and roasted them on a baking sheet at 400 for 15 minutes (seasoned with salt, pepper and onion powder, and tossed in avocado oil). At 15 minutes, I pulled out the baking sheet, added the broccoli (seasoned the same), and roasted everything together for an additional 10 minutes. I served the chicken and gravy in bowls over the potatoes and veggies and it was amazing!

I plan on continuing to post weekly meal plans after our baby arrives, but you may see some repeat recipes while we adjust to newborn life again.
