Happy Sunday! Here is the weekly meal plan for the upcoming week, with links to the recipes. Enjoy!
Monday: Copycat Costco Chicken Bake w/ Caesar Salad
Tuesday: Slow Cooker Creamy Garlic Chicken w/ Potatoes & Broccoli
*Notes: I used boneless chicken thighs instead of bone-in, and roasted potatoes and broccoli separately instead of adding to the crockpot. I also added more cornstarch than the recipe called for, in order to get the cream broth to thicken.
Wednesday: Leftovers
Thursday: Beef Tamale Casserole
*Notes: Instead of making the cornbread from scratch, I used boxed cornbread. You can still add the corn and chiles to the recipe, or omit them with this modification. I also added chopped broccoli to the ground beef mixture to get some veggies into the recipe, but any veggies will do. I cut the amount of cheese in the recipe in half and added half of that to the ground beef mixture, and half on top.
Friday: Takeout Night
