Weekly Meal Plan 1.14.24

Happy New Year! We started off the new year celebrating my birthday and getting back into our normal routine after the school break. It feels good to be back on schedule with our meal planning! Here is the weekly meal plan for the upcoming week, with links to the recipes. Enjoy!

Monday: Garlic Mushroom Chicken with Air Fryer Cauliflower

Recipe for Air Fryer Cauliflower:

20oz Cauliflower Florets

1/3 Cup Potato Starch (we use this brand)

3 tbsp Olive Oil

Salt & Pepper to taste

Break the cauliflower into bite sized pieces and coat them with the potato starch and olive oil. The potato starch and olive oil should have a paste like consistency and coat the cauliflower completely. Use more olive oil or potato starch as needed. Once they are coated nice and evenly, season with salt and pepper. Cook in the air fryer at 450° for 15 min, or until the tops are brown.

Tuesday: Instant Pot Thai Peanut Chicken with Rice & Roasted Broccoli

*Notes – save yourself time by browning the chicken in a separate, large pan. Also, pay attention to the note regarding the size instant pot you have so you can adjust the liquid as needed to avoid a burn notice.

Wednesday: Leftovers

Thursday: Banh Mi Rice Bowls

Friday: Deep Dish Pizza Night
