Happy Monday! The weekend got away from me, so I’m posting a day late. But I’m really excited to share this week’s meal plan, because it includes one of my new favorite recipes – slow cooker curry ramen with beef! This was a huge hit for my family. I wouldn’t say this was a very quick recipe (not exactly set it and forget it), as it requires you to brown the meat before putting it in the slow cooker, and also a few steps after the broth and meat are done in the slow cooker. But at the end of the day, it wasn’t difficult either, and definitely worth the extra steps. Enjoy!
Monday: Pan Roasted Chicken Thighs with Roasted Vegetables
*Notes: For the roasted veggies, we are used a combo of broccoli, brussels sprouts and sweet potatoes, seasoned with salt, pepper and garlic powder and tossed in avocado oil. Roast at 400°F for 15 min (remove broccoli), and roast the sweet potatoes and brussels sprouts for another 15 min, keeping an eye on them to avoid any burning.
