Happy Sunday! Here is the weekly meal plan for the upcoming week, with links to the recipes. Enjoy!
Monday: Spaghetti with Meat Sauce and Roasted Broccoli
*Notes: I don’t use a specific recipe for this one. We usually just cook the ground beef and add a red sauce from the store to make it easy.
Tuesday: Mini Sheet Pan Chicken Tostadas
*Notes: You can use rotisserie chicken, or make your own shredded chicken by throwing some breasts or thighs in the slow cooker on high for 3-4 hours. Also, watch the cook time on the tortillas – I found it to be a bit too long for mine. Adjust as needed for your oven. Overall, we really loved this recipe and will be adding it to the our list of favorites.
Wednesday: Hamburger Stew
Thursday: Leftovers
*Notes: The Hamburger Stew makes A TON of leftovers. I usually freeze anything leftover after the second day, which is great when we’re rushing and need something nutritious and filling at the last minute.
Friday: Slow Cooker Tuscan Garlic Chicken Thighs with Spinach and Sun Dried Tomatoes
*Notes: we added 8 oz of sliced mushrooms and a can of artichoke hearts, as a reviewer recommended. It came out really good!
