Monday: Easy Wonton Soup
*Notes: I double the amount of broth listed in the recipe, and add carrots and fresh ginger. I also don’t count out the wontons, I just add them until it feels right!
Tuesday: Slow Cooker Spinach-Artichoke Chicken Stew
*Notes: You can do this in the slow cooker or stovetop. We leave out the dill and halve the cream cheese amount and it turns out excellent. If you end up with leftovers, just be aware that the spinach-artichoke combination turns the stew an interesting dark color after it sits overnight (don’t worry, it still tastes great).
Wednesday: Shrimp Tacos
Thursday: Pesto Tortellini Salad
Friday: Takeout Night
