Monday: Slow Cooker Pork Loin Chile Verde
*Notes: It’s really easy to overcook the pork in this recipe if you aren’t checking the temp after about 3 hours. For this reason, I wouldn’t prepare this on a day that you plan to be out of the house. We served this taco style the first night and everyone really enjoyed it!
Tuesday: Leftovers – served over rice
Wednesday: Garlic Mushroom Chicken Thighs with Roasted Broccoli
Thursday: Slow Cooker Beef Ramen Noodles
*Notes: We LOVE this recipe. In addition to the pepper and carrots, I add a bag of frozen stir fry vegetables to give it more substance.
