Monday: Build-Your-Own Chicken & Veggie Bowl
This is a fun dinner idea because you can customize it any way you want! I make rice, chicken and an assortment of roasted veggies (or you can use a frozen bag of stir-fry veggies to make it easier). Then, I put out an assortment of sauces for my family to choose from. We always have teriyaki sauce, buffalo sauce, different salsas, etc. on hand. You can also use crunchy salad toppers, herbs, crushed nuts, or cheeses as finishing garnishes. Let everyone choose what they want in their own bowl, and enjoy!
Tuesday: French Onion Chuck Roast with Roasted Potatoes
Wednesday: Leftovers with Roasted Broccoli
Thursday: Baked Orzo Feta Chicken with Lemon
*Notes: I used chicken thighs instead of breasts, and cut them up into small pieces. I also added chopped cherry tomatoes and shredded spinach, and cooked for about 25 minutes total. With the modifications, it came out delicious!
