Monday: Slow Cooker Chicken Cacciatore
*Notes: This recipe offers two cooking options – high cook for 4 hours, or low cook for 8 hours. We did the high cook for 4 hours, and it was not enough time. This recipe really needs the longer, slower cooking time for the flavors to come together, and for the vegetables to fully cook through. This recipe also makes A LOT of food, so it’s great for larger families, or for families that love leftovers. This would also be a great recipe if you’re looking to freeze leftovers for busy nights.
Tuesday: Leftovers
Wednesday: Greek Chicken Power Bowls
Thursday: Easy Wonton Soup
*Notes: I double the amount of broth listed in the recipe, and add carrots and fresh ginger. I also don’t count out the wontons, I just add them until it feels right! We buy our wontons from Costco.
