Weekly Meal Plan 9.23.24

Happy Monday! Here is the weekly meal plan, with links to the recipes. Enjoy!

Monday: Butter Chicken

We don’t follow an official recipe for this one, but boy is it good! I cube about a 1lb of chicken thighs (breast also works), and brown them on the stove. Then, lightly steam a bag of pre-chopped cauliflower (roughly 2-3 cups), and throw all the ingredients together with the Dosa butter sauce from Costco over medium heat to warm them together. Serve over rice and it’s amazing!

Tuesday: Mahi Mahi Taco Bowls

An oldie, but goodie! It sounds so fancy, but it’s so easy to put together! I don’t always make the lime crema with it (or find something similar that is store-bought), and it still turns out really good.

Wednesday: Sweet Potato Chowder

This is a new recipe, and I really love it! I subbed in ground turkey instead of pancetta and seasoned it with more of the ground sage. FANTASTIC. The broth is the real winner here – so good.

Thursday: Leftovers
