Happy Monday! Here is the weekly meal plan, with links to the recipes. Enjoy!

Monday: Chicken Tikka Masala

We found this tikka masala sauce at Costco, and it was really good! There is no official recipe for this one. We just cut up some chicken thighs and cauliflower and cooked them in the sauce. We served over rice, with this naan on the side.

Tuesday: Big Mac Casserole

Wednesday: Slow Cooker Pozole (with the viral Pozole spice bombs from Ez Bombs)

You guys, I have been INFLUENCED! I tried the viral EZ Bombs after seeing them on TikTok and not only was it super easy, but it came out really good! The package comes with 2 bombs, and instruction on how to make the pozole. You just need 4 pounds of meat (we used pork shoulder), a 25oz can of hominy, and water or broth (I used beef broth). I cubed the meat, added the hominy and broth, and cooked on low in the slow cooker for 8 hours. I recommend skimming the fat off the top once the pozole cools. Our family really enjoyed it, and we’ll be making it again soon!
