Monday: Chicken Thighs with Elote Seasoned Sweet Potatoes & Salad
I don’t have an official recipe for this one – it’s mostly just throwing together things we had around. I cubed the chicken thighs and seasoned with taco seasoning and a pinch of two of salt, then pan roasted them on medium heat. Then, I took 2 sweet potatoes, peeled and cubed them, and seasoned them with this Elote seasoning I found at Costco awhile back. You can also make your own Elote seasoning – here’s a good recipe. Lastly, I made a salad using a salad kit from our local grocery store. This made for a really easy weeknight meal that everyone loved!
Tuesday: Tomato Gnocchi with Sausage & Mushrooms
*Note: The Italian sausage will have plenty of salt, so be careful with how much salt you add. It’s easy to overdue it with this one.
Wednesday: Mediterranean Roasted Chicken Thighs & Veggies
*Note: This recipe has you cook the chicken on the same baking sheet as the veggies. I personally never do this because the juices from the chicken tend to make the vegetables very soggy. We cooked the vegetables on the baking sheet and put the chicken in a roasting pan and cooked both at the same time for 20 minutes. The veggies may need more time, so keep an eye on it.
Thursday: Leftovers
Friday: Pizza Night
