Monday: Chicken with Asparagus & Mushrooms

Tuesday: Butternut Curry with Shrimp over Rice

To make this amazing dinner, we used this Maya Kaimal butternut curry sauce found at Costco and simmered 1/2 lb. of shrimp, minced garlic, onions, carrots, cauliflower, mushrooms in the sauce until the vegetables were soft. If you’re using frozen shrimp, I recommend cooking it separately, then adding to them to the sauce, so you don’t water down the curry sauce. We served over rice and it was AMAZING.

Wednesday: Leftovers

Thursday: Beef Curry Ramen

We LOVE this recipe! Although it is a slow cooker recipe, you do need to brown the beef before adding it to slow cooker, so make sure you have time for this step! It’s crucial for flavor, so I don’t advise skipping it.
