Happy Monday! Here is the weekly meal plan, with links to the recipes. Enjoy!

Monday: Street Corn Chicken Chili

This is an amazing recipe, with so much flavor! I boiled chicken thighs (it takes about 15 minutes), and shredded it for the recipe. We topped our chili with lime, cilantro and cotija cheese – don’t skip the toppings, they complete the dish!

Wednesday: Cranberry Balsamic Roast Beef with Creamy Mashed Potatoes

You guys, this roast beef recipe is one of the best dishes I’ve made in a LONG time. The cranberry balsamic combo is to die for! I browned the roast and followed the stove top method in my Dutch oven. We served it over mashed potatoes, similar to the linked recipe, however I did not use cream cheese. SO GOOD!
