
This is normally when I say “Happy Monday” but I’m a little late posting this week, so HAPPY TUESDAY! To make up for it, I’ve recipe tested a ton of delicious recipes for you below, including the viral Turkish Pasta from TikTok. It’s amazing, you have to try it!
Monday: Slow Cooker Thai Basil Chicken over Rice
*Notes: I also use Thai green curry paste instead of powder, and use the whole bottle. Adjust as needed for your own preferences.
Tuesday: Leftovers
Wednesday: Butternut Squash, Chicken Sausage, Kale & Quinoa Skillet
Thursday: Turkish Pasta
This recipe is going viral on TikTok, and for good reason – it’s really, really good! The original video can be found here from user but if you’re not a TikTok user, I typed it up below with a few minimal modifications I made. Enjoy!
Turkish Pasta:
For the garlic yogurt sauce:
- 1 cup Greek yogurt
- 4-5 cloves garlic, grated
- Juice from 1/2 lemon
- Salt, to taste
For the spiced lamb:
- 2 tbsp. olive or avocado oil
- 1/2 yellow onion, diced (I used a whole onion and it was great)
- 1/2 tsp of each – paprika, Aleppo pepper, cumin
- 3-4 cloves garlic, minced
- 1 lb of ground lamb or beef (I used beef)
- 2-3 tbsp pf tomato paste
- Salt and pepper, to taste
For the paprika butter:
- 1/4 cup butter
- 1 tbsp of paprika
- 2 tsp of Aleppo pepper
Other Ingredients:
- Pasta of choice, I used a 1lb of Rotini.
- Cherry Tomatoes, quartered (I used about 8 oz)
- Parsley (I used about 1/2 cup)
- Top with feta cheese (optional, but recommend)
- Heat 2 tablespoons of oil in a pan over medium heat. Add diced onion and garlic, and saute until soft. Add your ground meat, along with with the spices, salt and pepper and cook until browned. Add tomato paste, stir to combine, and cook until beef is done (approx. 7-10 min total). Set aside.
- Cook pasta according to package instructions, set aside.
- In a small mixing bowl, make the yogurt sauce by combining the yogurt, garlic and lemon. Add salt to taste. Set aside.
- In a small saucepan, melt butter over low heat. Stir in spices, then remove from heat.
- To assemble the pasta, add uncooked pasta to a bowl. Layer with the spiced ground meat and tomatoes. Add the yogurt dip and drizzle with some paprika butter. Sprinkle parsley on top. Enjoy!
- *Note, this made about 4-5 servings for us, with a little leftover cooked pasta.
