Lazy Mornings & Strawberry Pancakes

Oh weekends, how I love you so. After sitting in an office all week, I like to book up my weekends with time with my Cave Man and Cave Dog, Crossfit, cooking, chores, wine bar dates and as much time out side as humanly possible. That leaves about 0 time for relaxation. I know, rough life.

Life is all about balance and I truly believe it’s in your best health (and yes, please quote me on this) to allow yourself to have a lazy, wonderful morning every once in a while. Your laundry will still be in the hamper later. The dishes won’t wash themselves, but they also aren’t walking away. Your family, friends, bills, etc. will all survive if you set aside some ‘YOU’ time. You deserve it.

Lazy Strawberry Pancakes

My perfect lazy morning includes sleeping in as long as I can get away with, making myself a hot cup of coffee with coconut milk, reading some of my favorite blogs, and making a special breakfast for the Cave man and I. And by special, I mean a breakfast that includes pancakes. Obviously.

Pancakes are wonderful because once you have a good recipe, it’s like a blank canvas. You can add in so many different flavors and transform each batch into an entirely different meal. I especially like adding fruit because it adds just another touch of sweetness and makes me feel like like I’m being bad while being OH SO GOOD. So behold….

Lazy Morning Strawberry Pancakes

(Grain Free, Dairy Free, Paleo Approved)

Ingredients:

(4) eggs, preferably from pastured chickens

(2) bananas, mashed

(1) tbsp. apple cider vinegar

(1) tsp. vanilla extract

1/4 c. coconut flour

1 tsp. cinnamon

1 handful of strawberries, diced (I used frozen)

1 tsp. coconut oil

Coconut flakes for toppings (optional)

Maple syrup for drizzling (optional)

Method:

Whisk eggs and remaining wet ingredients in a medium size mixing bowl. Mash the bananas well and mix into the batter completely. Now, take your dry ingredients and mix right into the wet ingredients until thoroughly combined. Lastly, add the diced strawberries and lightly fold into the batter.

Heat up the coconut oil in large skillet over low heat. When the pan is hot, spoon 2 tablespoons of batter into the skillet for perfectly sized pancakes. Cook these bad boys until golden brown on each side.

Top with coconut flakes and maple syrup (or other toppings of choice) and enjoy! Remember, pancakes = blank canvas. Simply omit the strawberries for a plain pancakes recipe and/or add other fun flavors to shake things up.
