Happy Monday! Our oldest child is back in school, and our schedule is becoming a little more strict again after the summer break. So I’m back, sharing our family’s weekly meal plan, with links to the recipes, and any modifications we made. This week, we focused on easy meals that had plenty of leftovers. Enjoy!
Monday: Ground Beef Zucchini Casserole
This recipe is great with either quinoa as listed, or white rice. We’ve used both and loved both equally!
Tuesday: Leftovers
Wednesday: Chicken Tikka Masala
We found this tikka masala sauce at Costco, and it was really good! There is no official recipe for this one. We just cut up some chicken thighs and potatoes and cooked them in the sauce (boil the potatoes first). We served over rice and it was absolutely delicious!

Friday: Pierogi & Sausage w/ Green Beans
We found the pierogi at Costco, but most large grocery chains will have some version of pierogi in their frozen food section. We also used a chicken sausage instead of Kielbasa, because that’s what we had on hand. I cut the butter in half for this recipe to lighten it a little bit, and added green beans. It was really, really good! We’ll be including this in the rotation more regularly as long as we can find the pierogi.
