Hello friends! After two months of back-to-back illnesses (yay, preschool germs), and general life craziness, I am back to meal planning again! Here is this week’s meal plan, with links to the recipes. Enjoy!
Monday: Lemon Feta Chicken with Greek Roasted Cauliflower
Tuesday: Easy Steak Fajita Bowls
*Note: I really love how this recipe is not only super easy, but also surprisingly full of flavor. Sometimes I forget to marinate the meat, and it still comes out really good. We usually double or triple the cauliflower rice to make enough for the whole family to be satisfied.
Wednesday: Couscous Chicken Soup
*Note: This has become one of our favorite comfort meals this winter and it’s not difficult to make at all! It’s very filling and usually makes enough for leftovers the next day.
Thursday: Leftovers
Friday: Pizza Night!
